The history of chai in India

The early version of “chai” was caffeine-free and didn’t contain any tea leaves. Instead, it relied on the medicinal properties of spices like cardamom, ginger, cinnamon, cloves, and black pepper.

The modern form of chai, with its black tea base, is largely a result of British colonial rule in India. In the 19th century, the British, who were avid tea drinkers and sought to break China’s monopoly on the tea trade, began cultivating tea on a large scale in India

The popularization of masala chai was further fueled by technological innovations like the invention of the “crush, tear, curl” (CTC) method in the 1960s. This process made tea leaves more affordable and easier to infuse
